Carl’s brief is to make Chatillon a delicious richly flavoured yet un-complicated wine. To do so he had the grapes picked flavour-ripe which the vintage conditions allowed.

 
SUGGESTED MATURATION

Ideal for immediate drinking whether with a meal or on its own, but it will benefit from some short term keeping so long as the wine is stored in a cool place.

 
TASTING NOTE
Mouth-filling, rounded yet crisp, full-flavoured, medium-bodied balanced dry wine. Displaying citrus flavors with good palate presence.
 
fOOD MATCH
Fantastically versatile, Chatillon will accompany almost any recipe however these are a few of our favorites:
  • Grilled calamari/seafood with lemon butter and a gentle spice rub.
  • All cream or tomato based pasta dishes.
  • Vegetable lasagne.
